The small intestine is the office which extracts nutrients from digested food. It needs to be very daylong in order to function at its most efficient. By removing part of it (they wouldn't remove it all), it has had its aptitude to absorb matter reduced substantially. Thus, in order to maintain weight, Mr. Murray would hit to take a lot more. He could theoretically gain weight, but his calorific intake would need to be enormous.
